Welcome to another “Advocate From Your Plate” recommended Vegan recipe.
Breakfast anyone? Yes, please. Especially if breakfast means something special like waffles!
Dust off that old waffle iron and make a batch of these. Tip: Eat some; freeze some. Frozen homemade waffles are toaster ready for breakfast on the run.
Makes 6 Waffles
2 cups rolled oats
2 cups water
1/4 teaspoon salt
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 vegetable oil spray
1 fresh fruit, spreadable fruit, or maple syrup for serving
Preheat waffle iron to medium-high.
Combine oats, water, banana, salt, maple syrup and vanilla in a blender. Blend on high speed until completely smooth. The batter should be pourable. If it becomes too thick as it stands, add a bit more water to achieve desired consistency.
Lightly spray waffle iron with vegetable oil. Pour in enough batter to reach edges and cook until golden brown, 5 to 10 minutes without lifting lid.
Serve with fresh fruit, spreadable fruit, or maple syrup. Or top your waffles off with Kicky Waffle Syrup. Recipe below.

Top your waffles with Kicky Waffle Syrup. Vegan of course! Tastes great on a bowl of regular oatmeal too, especially in cooler weather. I also have been known to drizzle it over Vegan ice cream. The kick comes from the ginger.
KICKY WAFFLE SYRUP
1 cup real maple syrup
1/4 cup molasses (preferably blackstrap)
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg or mace
1/4 teaspoon salt
Combine all ingredients in a small saucepan. Stir constantly over medium heat until the spices are dissolved and syrup is desired warmth. Pour generously over your favorite waffle.
If you do not fancy a bit of kick in the morning, then how about some So Delicious Dairy Free coconut milk yogurt and fresh berries.
I guarantee you will love it. This is about as good as yoghurt gets.
