My neighbor Gloria’s household is converting to the vegan way of eating. She adores waffles and they are a huge part of her family’s weekend breakfasting.
Her four children were all born natural vegetarians. They have never liked meat and not crazy about dairy or eggs. Even as babies they would spit out that stuff, you know that comes in jars. Gloria ended up making their food herself from fresh fruit and veg.
She and the kids liked the waffle recipe she has been using. Because it was not Vegan she wanted to change. She therefore set out to find the perfect vegan waffle recipe.
After many attempts that didn’t quite meet up to Gloria’s expectations, she mentioned it to me. I helped her out with a recipe I found on the internet posted on New Year’s Eve 2012.
Here’s the recipe. It’s by Art of Dessert, and these are truly delectable. Please use rice milk. Using other non dairy milks — though delicious and great for cooking — will not yield the result we are looking for here.
Best Vegan Waffles Ever | Makes about 8 waffles | Allergy note: contains wheat ingredients
3 cups flour
2 Tbs baking powder
1-2 Tbs sugar (optional)*
1/2 tsp. salt
3 cups rice milk
1/3 cup orange juice
1/3 cup vegetable oil
1 tsp. vanilla extract
Cooking spray or cooking oil
Preheat waffle maker (if you’re using a Waring Pro, set it between 4 or 5).
In a medium bowl, mix together all the ingredients until smooth. Spray preheated waffle iron with non-stick cooking spray or lightly brush with oil . Pour batter onto waffle iron and cook until golden brown. Serve plain or garnish.
Gloria used her old waffle maker and the waffles tasted terrific. However, she was so inspired by the recipe author’s remarks on her new deluxe Waring waffle maker, she went out and bought one. Yes, it did make a difference but no worries, your waffles will turn out superbly.
* Make sure the sugar you use is vegan. I use organic or coconut sugar. Your average “white” sugar is not vegan.
