Couldn’t resist giving you two vegan posts today. You’ll be glad we did.
This is another decadent vegan recipe from those wonderful people at One Green Planet.
Insofar as the ingredients we did a bit of changing up to what we had on hand.
I like vegan cheese okay. For some reason I was one of those people who either wanted real cheese or none at all. Now, I have been without cheese for so long I have lost a taste for or interest in it.
But I do love creamy stuff, a lot. Since we had some home made vegan mayonnaise that turned out really thick and creamy we substituted it for the vegan cheese in this recipe. Oh my stars!
We also used some sesame seed bread we bought at the store. Read the label. There are more vegan breads available at your local supermarket than you might think.
Oh, and Earth Balance which it is a staple. I have yet to try coconut butter and am looking forward to it.
Everything else we did the same as below. I can’t begin to tell you how good this is. You’ll just have to try it. Here we go!
GREEN GODDESS GRILLER
1/3 cup basil, chopped
1/4 cup pine nuts
1-2 garlic cloves
1 cup kale, chopped
1/4 cup extra virgin olive oil
Salt and pepper to taste
1/2 avocado, sliced
1/2 cup spinach
Your favorite vegan cheese
1-2 tablespoons coconut butter
To make the pesto, add all ingredients to a blender and run until combined. Spread pesto sauce on both slices of bread.
On one slice of bread, add cheese, avocado and spinach. Top with the other piece of bread pressing it gently together.
In a small fry pan, heat up coconut butter. Cook sandwich on both sides for four to five minutes, or until golden.
Cut sandwich in half or in quarters.
