One Ingredient Vegan Ice Cream Recipe — It’s Bananas

I can’t believe we missed National Ice Cream Day. It’s was July 17. Sigh.

But it’s never too late to enjoy ice cream.

Here is a vegan recipe that is worth our repeating because it is so easy and because it is so very good.

It’s bananas!

All it takes is one ingredient — bananas — and a blender. Does it get any easier than that? And what a wonderful way to use those really ripe bananas sitting there going to waste and you wondering what to do with them.

TIP: Before you give up — if you are like me and hate cleaning the blender — check out this great tip.

Quick, easy blender cleaning: I add 2-3 drops of dish detergent, fill about 1/4 to 1/3 full with warm water. Blend on high for 30 seconds or so. Then rinse well. Done. Sparkling Clean! (Thank you 4eversixteen in comments at Instructable).

Okay. Try it and see if it doesn’t taste EXACTLY like ice cream!

INGREDIENTS

Bananas (yep, that’s it)

DIRECTIONS

Step 1: Freeze Very Ripe Bananas.

Bananas that have turned brown work but nearly brown best for this.

Peel, slice and freeze overripe bananas (bonus: you can use them to make smoothies too).

Step 2: Blend to Perfection

At first, the bananas resist the blending. Don’t panic. Add them bit by bit. They’ll reach a nice chunky smoothie-like stage. Use a spatula to smooth down the sides.

But you’re not done yet! Keep that blender running for another 3-4 minutes, and watch in amazement as what you once saw as frozen bananas turn into a rich, creamy, silky blend.

Of course you can use a food processor too.

Step 3: Enjoy!

Try this recipe as-is and see what you think.

Then feel free to consider this recipe as a template for all of your ice cream dreams.

Melt dark chocolate and add it. I like to “shave” it then fold it in along with chopped nuts.

Add maple syrup and pecans to taste for “butter pecan”. Add peanut butter, flavored extracts, fresh berries such a strawberries.

You can also add other frozen fruits. How about peaches with a 1/2 tsp of vanilla.

Just like with smoothies, the bananas take on the flavors of whatever you add to it.

  1. I tried this last summer – easy and delish. Last week I made a doggie treat version for our 3 Golden Retrievers. Follow the same recipe and add peanut butter and blend, then freeze in ice cube trays. Perfect for the sweltering heat we’ve been having this summer.

    1. Wow what a great idea Jane. I know the pups loved it. Actually humans could eat this too LOL. I wonder if you could put this ice cream in plastic popsicle molds and put them in the freezer. I wonder if they would come out, and if the sticks would “stick”. Wouldn’t hurt to try. If they didn’t come out just eat out of them with a spoon.

      1. I tried one, it was delish. They come out of the ice cube trays easily so maybe the popsicle sticks would work too.
