Ingredients
Serves 12
You will need:
For the sweet dough:
3 1/4 cups spelt flour
2 tsp package active dry yeast
1 cup almond milk
1/3 cup vegan butter (such as Earth Balance)
1/3 cup coconut sugar
1/2 teaspoon salt
1/2 cup plain soy yogurt
For the filling:
2 tbsp vegan butter, softened
1/4 cup coconut sugar
1/2 cup maple syrup
2 tsp ground cinnamon
1/2 cup unsweetened shredded coconut
For the glaze:
1 cup powdered sugar
2 tbsp maple syrup
Butter is a dairy product, made from cow’s milk, stolen from baby calves. I’m assuming that Vegan Fling meant to say “vegan butter,” e.g., Miyoko’s Kitchen’s European Style Cultured Vegan Butter, or Earth Balance’s Original Buttery Spread?

Good catch Marina. I am sure she did mean to say vegan butter. It would never occur to me she meant anything else but then I have been living this way for a very, very long time! I’ll “fix” it.
