With the weather heating up I am all about salads. Love, love, love salads. And salads are something anyone can make. You don’t have to cook!
But you know me, I like to challenge y’all here a little bit. Plus there are so many great vegan cooks and chefs doing marvelous things. You might not see what they are getting up to otherwise if I didn’t show you a few examples here and there.
So what’s so challenging about making a vegan Greek Salad? One of the ingredients that makes a Greek Salad so tangy and tasty is the feta, right? Feta, as in feta cheese. That’s not vegan. Well Alex at Delish Knowledge shows us how to make it, from tofu.
Now don’t start crinkling your nose. Tofu handled correctly is fabulously good. You just have to treat it right. You know what I mean? Wink.
You can tell from the picture pretty much what’s in the salad. So we are going to talk tofu.
The secret in making this cheese is pressing the tofu for a minimum of 1 hour. You are pressing your tofu anyways, right? I swear by this tofu press because I’m #lazy, but you can also wrap your tofu in a paper towel/kitchen towel then add something heavy on top. In an hour, you will be left with a squished block of tofu (and probably water all over your counter, so I suggest placing your tofu wrap on a cutting board first.)
Now, the magic begins! Because tofu is so porous and spongy, you need to get rid of it’s liquid so that you can rehydrate it with the good stuff- salty, tart feta marinade!
From there all you do is cut the tofu into cubes, toss it with the following ingredients and let is sit 2-3 hours to absorb all the flavors. I always like to marinate longer than most recipes call for.
Here’s what you will need.
1 package of extra firm tofu (400 g)
2 tbsp white miso
3 tbsp water
1 lemon, juice (about 2 tablespoons)
1 tbsp apple cider vinegar
1 tbsp olive oil
1 tbsp nutritional yeast
1 teaspoon dried oregano
½ tsp garlic powder
½ tsp salt
Yes you can rinse your tofu, put on a chopping board, load it up with paper towels and put heavy objects on top of it to squeeze the brine out, but why not get a cute little tofu press. We eat very little tofu at our house but boy does one of these come in handy when we want to.
