Ingredients
- 8 oz Baby Bella Mushrooms (chopped)
- 1/2 White Onion (chopped)
- 1/2 Green Bell Pepper (chopped)
- 3-4 cloves Garlic (minced)
- 1/4 Jalapeño (minced)
- 2 Tbs Vegetable Broth (to saute)
- 2 cans Tomato Sauce (8oz cans)
- 1/2 cup Apple Cider Vinegar
- 1/3 cup Maple Syrup
- 1/4 cup Tomato Paste
- 1/4 cup Molasses
- 2 Tbs A1 Sauce
- 1 Tbs Brown Sugar
- 2 Tbs Liquid Smoke
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Black Pepper
- 1/4 tsp Salt

Underwood recommends the homemade BBQ sauce recipe by Gimme Some Oven. Her BBQ sauce recipe is not vegan, but Underwood has “veganized” it for you (about half way down the page). You will go crazy for it.

— Mustard Cole Slaw
Underwood tells us:
“Cole slaw on top of your pulled pork sandwich is a Carolina thing, I know that. But it is GOOD so I am adding it to my recipe. If you’re not into cole slaw, simply leave it off and chow down on the amazing BBQ you just made.”
How To Make It
“Shred about 1/4 of a cabbage into long strips. I also shredded a carrot too and about 1/2 of a red onion. Add about 1/8 of a teaspoon of celery seed, 2 full tablespoons of Dijon Mustard, and maybe 1/4 cup of Apple Cider Vinegar.
Stir that around real good until all the veggies are evenly coated.”
