Tornado Potatoes

These are delicious and so fun to make. Yes, they are vegan. The other good news is you won’t have to do much if any shopping to make this recipe. All you need are potatoes, some oil and commonly stocked spices. Oh, yes and some skewers. Enjoy!

You can't go wrong. ⠀ .⠀ Ingredients⠀ 2 medium white potatoes⠀ 2 tbsp dairy-free butter/oil, melted⠀ 1½ tsp onion powder⠀ 1 tsp garlic powder⠀ 1½ tsp paprika⠀ ½ tsp cayenne pepper⠀ 1 tsp dried oregano⠀ ½ tsp ground ginger powder⠀ ½ tsp salt⠀ Parsley, chopped (for garnish)⠀ .⠀ Method⠀ 1. Preheat oven to 350ºF/180ºC.⠀ 2. Insert a skewer into the potato and gently push the skewer all the way through it.⠀ 3. Hold a sharp, thin knife at an angle and cut in the opposite direction you are turning the skewered potato. ⠀ 4. Gently fan out the potato down the length of the skewer, until you have an even gap between the slices forming the spiral. ⠀ 5. Brush melted dairy-free butter or oil all over the potato.⠀ 6. In a medium bowl, combine all dry ingredients (spices) and mix.⠀ 7. Place the skewered potato over the bowl and dust the mixture all over the potato until it is entirely coated. ⠀ 8. Rest potatoes on a baking sheet so that it is hovering over the bottom of the sheet. Bake for 25-30 minutes, or until nicely browned.⠀ 9. Garnish with additional parmesan and parsley. Ingredients

  1. 2 medium zucchini (200g each)
  2. 1 egg + 2 Tbsp water
  3. 1/4 cup almond flour
  4. 1/4 cup parmesan cheese, shredded
  5. 1 tsp garlic powder
  6. 1 tsp onion powder
  7. S&P to taste
  8. Fresh parsley for garnish, optional
  9. 4 wooden* or metal skewers
