INGREDIENTS
Sweet potatoes (Orange-fleshed ones only. Yams work too.)
Vegan Butter
Cinnamon
Thyme
Smoked paprika. Chipotle powder will work as a stand-in.
Coconut sugar & maple syrup
Pecan nuts. Walnuts would work well too.
Vegetable stock (To braise those roasted sweet potatoes and let them soak up all the flavours.)
HERE’S HOW
Step 1: Peel and slice the potatoes into thick rounds. Schmear with butter and sprinkle with thyme and cinnamon.
Step 2: Bake until golden then pour over the stock.
Step 3: Roast again until the liquid has been absorbed.
Step 4: Step 4 – Candy the pecans. Then let them cool and crisp up on baking parchment.
