It’s summer. Hot and sticky in our hemisphere. Houston is a veritable steam bath! But then . . . . you know.

How about something totally cool then — like popsicles? Yessss!

I love popsicles, don’t you? I especially love making popsicles. Vegan ones. Naturally!

Vegan breakfast idea — Coconut Cinna Ring — by Vegan Fling

I am not going to do anything but show you a gorgeous picture and list the ingredients so you can see if you already have what you need, or feel like going out to get what you need, to make it.

Make this up, put it in the fridge and pop it into the oven when you are ready. I would rather cook in the evening than in the morning, so I love recipes where I can do this, don’t you?

Cinnamon is one of my favorite flavors ever. Let’s go!

Serves 12

You will need:

For the sweet dough:
3 1/4 cups spelt flour
2 tsp package active dry yeast
1 cup almond milk
1/3 cup vegan butter (such as Earth Balance)
1/3 cup coconut sugar
1/2 teaspoon salt
1/2 cup plain soy yogurt

For the filling:
2 tbsp vegan butter, softened
1/4 cup coconut sugar
1/2 cup maple syrup
2 tsp ground cinnamon
1/2 cup unsweetened shredded coconut

For the glaze:
1 cup powdered sugar
2 tbsp maple syrup
