Blackberry Coconut Lime, Strawberry Lime Yogurt Popsicle Recipes

I know I have already posted a great vegan recipe today but just couldn’t wait to tell you about these. I love homemade. You know what’s in it. And I am wondering how many of you, like me, had some popsicle molds tucked away and (mostly) forgotten. Let’s go!

Blackberry Coconut Lime Popsicles
Makes 6 small/4 large pops

1 can full-fat coconut milk
1/4 cup + 1 Tbsp agave nectar
1 tsp vanilla extract
2 1/2 cups blackberries, rinsed and drained
1 lime, zested
1/4 cup lime juice
pinch salt

In a medium bowl, combine coconut milk, 1/4 cup honey, salt, and vanilla extract, and whisk to combine.

In a blender, puree blackberries, then pour through a fine-mesh strainer to remove seeds. With the back of a spoon or spatula, press berry pulp and seeds against the strainer to help extract all of the liquid. Discard the seeds. Add 1/2 cup of the coconut milk mixture and 1 tablespoon honey to the strained berries, and whisk.

Add the lime juice and zest to the remaining coconut milk mixture, and stir to combine.

Pour alternating layers of the coconut milk mixture and the berry mixture into popsicle molds. Freeze for about 30 minutes, then insert sticks and freeze until firm.

Notes
If you’re in a hurry, you could just strain the berries and throw everything together. You won’t have the pretty layers, but you also won’t get as many bowls dirty.

Strawberry Lime Yogurt Popsicles
Makes 6 small/4 large pops

1/2 cup lime juice
zest from 1 lime
2 cups strawberries, washed and hulled
1 1/2 cups your favorite brand vegan yoghurt (http://food.allwomenstalk.com/vegan-yogurts-to-try)
1 tsp vanilla extract
1/2 cup agave nectar

Place the strawberries in a bowl and mash thoroughly. Add the remainder of the ingredients, and stir until mixed. Freeze for about 30 minutes, then insert sticks and freeze until firm.

  1. This is off the blog subject but I have some interesting information to pass along for hot flashes. This was in the Peoples Pharmacy Sunday paper. This lady tried pine bark extract and she said it stopped the flashes as soon as she started taking it so if women knew about this extract that might save a lot of horse lives along with the lives of untold menopausal women around the world.
